Overnight oats that feel like a treat ✨ Juicy peaches, chia seeds, and vanilla plant protein make this high-protein vegan breakfast your new morning obsession.
Ingredients

1 fresh ripe peach (diced)

¼ cup raw rolled oats

2 tsp chia seeds

¾ cup unsweet almond milk (or your choice milk)

½ - 1 scoop Growing Naturals vanilla pea protein (may substitute with vanilla rice protein)

½ tsp ground cinnamon

¼ tsp ground ginger
-
2-3 dashes ground nutmeg

2-3 dashes cardamom

Optional: chopped pecans
Directions
Wash and dice the peach into bite-sized chunks. Set aside.
In an airtight container, combine the oats, chia seeds, milk and pea protein powder until most clumps are gone.
Stir in the spices until smooth.
Stir half of the diced peaches into the oat mixture, gently mashing them with a fork or muddler to release their sweet juices. Save the other half for topping your oats tomorrow.
Cover and refrigerate overnight (or at least 4 hours) so the oats and chia can soak up all the flavor.
Stir well in the morning, then top with the remaining peaches and a sprinkle of added cinnamon. Add pecans if you’d like a little crunch!
