A Protein-Packed Breakfast Treat!
Start your morning with these delicious healthy s’mores pancakes, packed with 18g of protein and 5g of fiber per serving! Light, fluffy, and infused with rich chocolate from cacao powder and topped with marshmallows, they deliver all the cozy campfire flavors you love—without the sugar crash. Perfect for a high-protein, plant-based breakfast, these pancakes are a must-try for s’mores lovers and healthy eaters alike!

1/4 Cup raw rolled oats
1 Tbsp. coconut flour
1 Tbsp. cocoa powder
1 scoop Growing Naturals chocolate rice protein
1/3 Cup unsweetened vanilla almond milk (or water)
6-8 drops vanilla liquid stevia (or your choice sweetener)
Crumbled graham crackers
Marshmallows
Syrup
In a small blender (I used a Magic Bullet), blend together dry ingredients until oats are ground.
Add wet ingredients and blend again to combine. You may need to add more liquid if you let it sit – coconut flour is extremely absorbent.
Heat pan over med-high, spoon batter onto pan, and cook until done (3-4 mins each side).
Top with crumbled graham crackers and marshmallows. I torched my marshmallows for a second to get them nicely melted.
