Seasonal Fruit Salad

4 cups of dressing.
Ingredients

2 cups pomegranate vinegar (a recipe for an optional substitute of watermelon infused vinegar will follow)

1/3 cup agave nectar

1⁄2 an avocado
-
38g (2 scoops) GrowingNaturals original Pea Protein powder

1 tbls. Maldon sea salt

1 cup extra virgin olive oil

1lbs. figs cut in wedges

1 each apple sliced
-
2 each nectarines sliced
-
4oz. mint
-
8oz radish sprouts
-
1 cup of dressing
-
(Optional) 1⁄4 cup pickled watermelon rind

Rind from one watermelon shaved thin
-
2 cups champagne vinegar
-
2 tsp. ground cardamom
-
1⁄4 cup coriander seed
-
1 tbls. Whole black pepper
-
2 tbls. Dried lavender
-
1⁄4 cup agave nectar

Pickled Watermelon Rind
Directions
Place all ingredients except the olive oil in a food proceser and blend thoroughly until all ingredients are completely incorporated. Then slowly drizzle in the oil while continuing to blend.
Salad Ingredients (for four)
First, pour your dressing into a mixing bowl, and as you slice your fruit place it in the dressing to keep it from browning/oxidizing. Once you’re done cutting the fruit, mix thoroughly. Finally, add the radish sprouts and mint!
Pickled Watermelon Rind
First cut your watermelon rind into manageable 1 and 1⁄2 inch by 4 inch “Sticks”, then shave into thin 1 and 1⁄2 inch strips and place in a glass jar. In a saucepot heat your vinegar to a simmer, add the remaining ingredients, cover and remove from the heat. Let your vinegar steep like tea for ten minutes. Then pour the vinegar over your watermelon rind straining out the spices. Cover jar and refrigerate.
