
Healthy Lemon Protein Donuts (Vegan)

If you love lemon desserts, then you'll love these healthy, baked, lemon-flavored doughnuts made without eggs! Don't worry, they're still incredibly fluffy and contain added plant protein (that you can't even taste) for a filling and guilt-less summertime treat. Shredded coconut topping adds a chef's kiss, but is totally optional.

½ cup all-purpose flour (or substitute with gluten-free flour such as King Arthur’s)
¼ cup oat flour
1.5 scoops Growing Naturals Original Pea Protein (pea protein is a natural vegan egg replacer)
1 tsp baking powder
¼ tsp baking soda
1/8 tsp salt
¾ cup coconut milk (or plant milk of choice)
3 tbsp. unsweetened coconut cream* room temp (or substitute with melted coconut oil or vegan butter)
¼ cup sugar (or sweetener of choice)
¾ tsp lemon extract
1.5 tsp lemon zest
½ cup powdered sugar
1 tbsp lemon juice
(optional) ¼ cup shredded coconut for topping
Preheat the oven to 350 degrees F.
In a small bowl, whisk together all the wet ingredients and set aside.
In a medium bowl, whisk together all the dry ingredients and remove all clumps.
Pour wet ingredients into the dry and fold in with a spatula until thoroughly combined.
Place the dough in a medium sized ziplock bag or frosting bag and pipe it evenly into a 6 piece donut pan.
Bake in the oven for 10 minutes.
While they bake, prepare the lemon glaze by mixing the sugar and lemon juice in a small bowl.
Once the donuts have cooled, dip them into the glaze and top with shredded coconut for added flavor and crunch!
