This healthy no-bake fudge is made with just 4 wholesome ingredients! Naturally sweetened with dates, packed with pea protein, and rich in chocolate flavor — it’s vegan, flourless, and seriously satisfying.
¾ cup unsweetened nut & seed butter (or your choice nut or seed butter)
¼ cup unsweetened cocoa powder
1 cup of warm water
Directions
Add the pitted dates to a medium bowl and pour in the warm water. Let them soak 1-2 mins until softened.
Drain the softened dates, reserving 2 tablespoons of the soaking liquid.
Transfer the softened dates and the reserved 2 tablespoons of liquid to a food processor, and blend until smooth.
Add the remaining ingredients to the food processor and blend until a thick, dough-like mixture forms. The dough should be soft but not sticky. If it's too sticky, add a bit more protein powder. If it feels too dry or crumbly, mix in 1 more tablespoon of warm water.
Press the dough evenly into a lined loaf pan, and if desired, sprinkle the top with coarse sea salt. Cover and refrigerate for at least 30 minutes, or until chilled.
Once chilled, slice into 15 pieces — 5 across and 3 down. They may look small, but each one is rich and satisfying!
