1/2 cup almond flour (may substitute with oat flour)
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
½ cup or slightly more unsweetened vanilla almond milk (or your choice milk)
1 cup blueberries
Directions
Preheat oven to 375 degrees F
In a large bowl, whisk together the eggs, milk, and vanilla extract until smooth. Add the dry ingredients to the wet mixture and stir until fully combined. If the mixture appears too dry or crumbly, gradually add a bit more milk until it comes together.
Spray 9×9 pan with cooking spray and pour mixture in.
Bake for 30-35 minutes or until golden brown and tooth pick comes out clean.
