Gluten-Free Peach & Blueberry Microwave Protein Muffin

Ingredients

  • 3 Tbsp buckwheat flour (may substitute with oat flour or other gluten-free flour)

  • 1 scoop Growing Naturals vanilla rice protein (may substitute with vanilla pea protein)

  • 2 egg whites or 2 Tbsp of egg whites (or 1.5 tsp dry egg replacer)
  • 1/2 tsp baking powder
  • 1/4 cup applesauce
  • 1/4 cup milk of choice
  • 1/2 peach chopped
  • 1/4 cup blue berries, frozen or fresh

Directions

  1. In a small microwave-safe bowl, combine flour, protein powder, egg whites, and baking powder.

  2. Stir in applesauce and milk, adding a little extra milk if the batter seems too thick (this can vary by flour and protein powder).

  3. Fold in most of the peaches and berries, reserving some for topping if desired.

  4. Microwave on high for 3½ minutes, then enjoy warm.
