Easy Coconut Mocha Energy Bites

These bites are made with AM Energy, our delicious protein + coffee + fiber powder and deliver 20mg of caffeine, and 5.6g protein per bite. Make them ahead and grab a few to power you through an afternoon slump or before your workout!
Ingredients

1 scoop AM Energy (morning mocha flavored)

½ cup oat flour (could substitute with coconut or almond flour for keto version)

2 Tbsp coconut butter, melted (could substitute with coconut oil or your choice nut/seed butter)

2 Tbsp coconut milk (or substitute with your choice milk)

2 tbsp dried coconut flakes (for the coating)
Directions
In a small bowl, mix the AM Energy and flour with a whisk thoroughly until there are no more clumps.
Pour the melted butter over the dry ingredients and combine with the whisk. Will start to look crumbly.
Pour the milk into the mixture 1 tbsp at a time and mixing in between. If using coconut or almond flour, see the note below.
Using a spatula or your hands, press the mixture together into a large dough ball.
Place the coconut flakes into a small bowl.
From the dough, form approximately five 1 inch balls, gently press and roll them each into the bowl with coconut flakes as you make them.
Note
If you are using almond or coconut flour, they tend to absorb more liquid so you can add more milk as needed 1 tbsp at a time, until the mixture sticks together and forms a nice dough. The dough should not be sticky, but also not so dry that it falls apart either.
Nutrition facts will be slightly different when using coconut oil instead of coconut butter. Coconut butter is pureed coconut flesh and contains a bit of carb and fiber in addition to healthy fats, versus the oil which is purely healthy fats.
