Key Lime Pie Protein Shake With the summer coming, I can’t get enough ice cold, thick protein shakes. We know that it’s important to get in at least 20 grams of protein after a workout to promote recovery and muscle growth. After an intense workout in the heat, I have a hard time eating much in the way of solids. My solution is to drink my protein. A cold shake is an easy way to cool down and refuel… especially when it tastes like pie! With the heat comes key lime season. Most of us have had the pleasure of eating key lime pie. It’s delicious, but not exactly the healthiest option. Especially not after a workout! With the recipe I aimed to re-imagine one of my favorite summertime desserts as a fun, healthy treat. The tart key lime is balanced with the natural sweetness of banana and a bit of stevia. Banana also contributes to the creaminess and adds carbohydrates, which are also important for recovery. You even have a serving of greens in this one. The all-natural lime color is actually from spinach! I swear you can’t taste it. Of course everyone's favorite part of pie is the crust. Rather than the usual buttery calorie bomb, I rimmed my glass in a mix of crushed cereal and sugar-free maple syrup. Crunchy goodness with each sip! You can’t have key lime pie without the cream; this drinkable version didn’t lack that finishing touch! A healthy, fluffy topping made from coconut flour and vanilla almond milk floated atop my pie-drink. Key Lime Pie Protein Shake
- 1 C spinach
- 1 scoop vanilla rice protein powder
- 1/2 banana
- 1/4 C unsweetened vanilla almond milk
- 4-5 T fresh lime juice (or 1/4 small lime if you have a high-speed blender)
- 1 T ground flax
- 1/4 tsp almond extract
- 1/4 tsp Guar Gum (optional, adds creaminess)
- 7-8 drops liquid stevia (or other sweetener)
- Ice, to taste
- 2 T cereal crumbs
- Sugar-fee maple syrup
- 1 tsp coconut flour
- 2 tsp water
- 1 drop liquid stevia
