- 1/2 C cooked quinoa
- 1/4 C almond milk
- 1/4 C blueberries
- Juice from a quarter of a lemon
- 1/2 scoop Growing Naturals vanilla rice protein powder
- 1/2 tsp cinnamon
- 3-4 drops vanilla stevia (or other sweetener, to taste)
Cook quinoa as instructed on the package (this can be done in advance and stored in the refrigerator). Scoop 1/2 C of the cooked quinoa into a cereal bowl. Mix in remaining ingredients and top as desired (I used walnuts and more blueberries). You can also warm this in the microwave for a hot breakfast.
Makes 1 serving.
