Makes 7-8 small pancakes (about 6 inch diameter)
Ingredients
Dry ingredients
- 3/4 cup your choice flour (I used all-purpose)
- 1.5 scoops Growing Naturals original pea protein
- 2.5 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp salt
Wet ingredients
- 3/4 cup your choice milk (I used unsweetened coconut milk)
- 1/3 cup liquid egg whites
- 2.5 Tbsp unsweetened applesauce
- 1/4 tsp vanilla extract
For apple pancake syrup:
- 1-2 small apples, chopped
- 1/4 cup maple syrup (or your choice sweetener)
- 1/4 tsp cinnamon
- 1 Tbsp ground flaxseed
Directions:
- Thoroughly mix the dry ingredients in a medium size bowl.
- Thoroughly mix the wet ingredients in a small bowl.
- Pour the wet ingredients into the dry and slowly mix together; but don’t over mix. A few clumps are ok.
- Using a 1/4 cup measuring cup, ladle out batter onto a non-stick pan or griddle over medium heat. Use a pinch of coconut oil or your choice oil to cook the pancakes with.
- In a small saucepan, on low to medium heat place all the ingredients in for the syrup and cook until the apples become tender. Pour as needed over your pancakes
