Each of these recipes is rich in one or more of the essential nutrients or phytochemicals needed to support a healthy cardiovascular system.  These include minerals like potassium, calcium, and magnesium which aid in the contraction of the heart muscle; vitamins like B6, B12 and folate to help regulate levels of metabolic by-products; antioxidants which help to prevent arterial plaque build up and fiber which can help to reduce cholesterol and also keep blood vessels and arteries from hardening or plugging up.  They’re also naturally low in cholesterol, saturated fat and sodium.
