Makes 4 stuffed halves

IngredientsGrowing Naturals - Vegan Stuffed Bell Peppers

  • 2 large bell peppers
  • 2 cups long grain rice, cooked
  • 1 scoop Growing Naturals original rice protein
  • 1 cup mushrooms, chopped
  • 1 1.5-oz can water chestnuts, chopped
  • 1/2 medium onion, diced
  • 1 16-oz can diced tomatoes
  • 2 16-oz cans tomato sauce
  • salt and pepper to taste

Directions

Cook the rice as directed. Mix in all remaining ingredients and scoop into peppers. Bake about 20-30 mins at 400 degrees.
