Makes 7-8 small pancakes (about 6 inch diameter)apple-cinnamon-protein-pancakes

Ingredients

Dry ingredients

Wet ingredients

  • 3/4 cup your choice milk (I used unsweetened coconut milk)
  • 1/3 cup liquid egg whites
  • 2.5 Tbsp unsweetened applesauce
  • 1/4 tsp vanilla extract

For apple pancake syrup:

  • 1-2 small apples, chopped
  • 1/4 cup maple syrup (or your choice sweetener)
  • 1/4 tsp cinnamon
  • 1 Tbsp ground flaxseed

Directions:

  1. Thoroughly mix the dry ingredients in a medium size bowl.
  2. Thoroughly mix the wet ingredients in a small bowl.
  3. Pour the wet ingredients into the dry and slowly mix together; but don’t over mix. A few clumps are ok.
  4. Using a 1/4 cup measuring cup, ladle out batter onto a non-stick pan or griddle over medium heat. Use a pinch of coconut oil or your choice oil to cook the pancakes with.
  5. In a small saucepan, on low to medium heat place all the ingredients in for the syrup and cook until the apples become tender. Pour as needed over your pancakes
