Dark Chocolate Protein Muffins with a Hella Yummy FillingIngredients
1 cup of plain Total 0% Greek yogurt
1 cup of brown rice protein (chocolate flavored)
2 tbsp of unsweetened cocoa powder
1 tbsp of ground espresso
1 and 3/4 cup of liquid egg whites
1 cup of oat flour
3/4 cup of milk (unsweetened coconut or your choice)

Directions: Mix the muffin ingredients together and bake the batter in muffin cases for half an hour at 350 degrees F.

For filling combine:
1 cup of Greek yogurt
4 tbsp of pecans
3 medjool dates, diced

Scoop out a hole in each muffin and stuff with filling. In addition to adding sweetness to the muffin, the pecans add a nice crunch factor. Enjoy!
